It all began in 1818 when Nicolas François Billecart and Elisabeth Salmon founded a Champagne House that was above all conscious of the excellence of its wines, Champagne Billecart-Salmon! Since then, every member of the Billecart-Salmon family has been committed to perpetuate the family tradition through standing by the immutable oath: ‘Give priority to quality, strive for excellence’.
Of the twenty three 3 Star Michelin restaurants in France, twenty one serve Billecart-Salmon Champagne.

It is a wonderful success story of a hard-working family who have continued to follow the dream and high standards set by their ancestors Nicolas and Elisabeth. The couple were given a parcel of land, close to the charming village of Mareuil-sur-Ay in the heart of Champagne, as a wedding gift by the Salmon family. They decided to focus on producing top end sparkling champagnes. The House is now run by the seventh generation of the family, brothers François Roland Billecart and Antoine Roland Billecart. Their father Jean Roland Billecart, now 90 and with the experience of over 70 vintages under his belt, is still involved with the company.
